AS bascically a loop back address is used for testing purpose as the loop back address ip is 127.0.0.1 and when you ping this address so it will always reply back. So as burp suite is a invisible proxy suite that allows the non HTTP users to connect to the servers and through this our data can be directly send forward and can be miss used so thats why in replace of using your true ip we use the loop back address as it keeps allow us to test the suite until a firewall prevents it
