Bread and alcoholic drinks (such as wine) are made by using baker's yeast (Saccharomyces cerevisiae). Baker's yeast catabolizes pyruvate (which comes from glucose by the process of glycolysis) under anaerobic (no oxygen) condition.This converts pyruvate into alcohol and carbon dioxide and the process is called alcohol fermentation.
Due to the production of carbon dioxide by yeast, the bread gets its fluffy texture because CO2 gets trapped within the bread. Wine is produced from fermentation of grapes.
