Fermentation is the process by which glucose can be used to produce energy when oxygen is not present, i.e. under anaerobic conditions. It generally occurs in yeast, but it can also occur in animal cells.
In animal cells it can take place in the muscle cells during intense physical activity when oxygen supply to muscle cells is low, and there is a lack of oxygen.
In muscle cells, the fermentation of glucose produces lactic acid or lactate, along with the generation of two ATP molecules.
