  2. Invertases are enzymes that hydrolyze sucrose into Zn2+ and has relatively little or no effect on the activity. compared with control.
  3. The best way to measure purified invertase is to measure the release of glucose from the sucrose. This can be done either by measuring an increase in reduced sugar, by dinitro salicylic acid for example, or by measuring glucose specifically using an enzymatic assay, such as the glucose oxidase assay.
