why is acetenoid stored in the refrigerator and what products form when it decomposes at room temperature?
During the protection of a functional group carbonyl inti its corresponding acetonide we will use small amounts (catalytic) of acid. If we cannot remove the acid completely then acetonide will be decomposes (deprotected) to initial carbonyl one as shown in below.
At low temperatures most of the molecular motions ceases and in addition deprotection step is endothermic process. Hence acetonide is safer to store, it will not hydrolyze.
