Yeast cells growing on glucose obtain their energy mainly through fermentation. Since fermentation is a relatively inefficient way of generating energy, a high glycolytic flux is essential. In the presence of rapidly fermentable sugars yeast glycolysis is fully activated. The glucose concentration has been shown to affect the rate of yeast fermentation and carbon dioxide production. if there is a rise in concentration of glucose it will cause fermentation rates to increase and with it increase production of carbon dioxide.
