A piloting solution can tell the stakeholders that what would be the approximate success rate of the service or the process, what would be the customer acceptance levels of those services or process, are any amendment’s needed In the process, is everything as per the set expectation or something has to be revised and hence piloting on a sample would ensure that an idea of the success or failure can be judged and anticipated.

I would roll out the new kitchen format at least 4different stores located in 4 different geographical areas so that response from every factor and location can be received and if any customization as per the requirements of a particular geographical location having a different culture is needed can be done.
