Contains Hydrogen in them and USFS can contain carbon-carbon double bond in them  (take a look at fig 5-5).

unsaturated fatty acids are again  divided into monounsaturated fatty acids and polyunsaturated fatty acids

Poly unsaturated FAs (PUFA) are further divided into omega-3 and omega-6 fatty acids.
