how do sailboats sail up wind? It is obvious how they move with
the wind but definitely not so obvious how they go against the
wind. Going along with this, baseballs would still fly even if
there was no lift BUT how do Frisbees and boomerangs work?

Thus, the sails create a resulting force pointing between the direction of the wind and the keel's direction of the ship. Since the force's component perpendicular to the boat's direction is countered by the keel, the net acceleration is higher .
Boomerangs operate as single-winged aircraft that maneuver through the air by the force applied by a throwing motion. Air that flows up the curved side of a wing generates the lift for boomerangs to take flight. The air flowing past the curved side has further to travel than the air that passes on the wing's flat side.
