Drying agents are the salts which can abstract the water from the organic solution.

When the anhydrous conditions are neccessary then it is important to remove all the water from the organic solutions therefore the drying agents are used which removes all the water from the organic solutions and makes sure that the reaction goes to the completion.

Therefore the in the organic solutions drying agents are used to remove any water present in the organic solution.
