As you would be already knowing that Vitamin C is L-ascorbic acid.Its structure is shown below

Now,

Methanol (CH3OH) is a polar protic solvent.


Now as vitamin C (L-ascorbic acid) is a highly polar compound due to the negative charge from the oxygen (it can be checked by shifting the double bond of oxygen)of all the hydroxy groups.i.e it is a polar compound

Now as we know Methanol is a polar solvent

Therefore due to "like dissolves like" Vitamin C is soluble in methanol.
