During crystallization, why is it important to wait until the crystals are formed at room temperature before placing them in an ice-water bath? (benzoic acid synthesis)

Gradual cooling results in the formation of large, well-defined crystals. Due to rapid crystallization, impurities may trap in the crystals. This interferes with purification compound. Crystallization is used to purify the compound

With decrease in temperature, rate of crystallization slows. So if we do not wait until crystals are fomred at room temperature and immediately place them in ice- water bath, then much more time will be required for crystallisation.
