Ester is hydrolysed if its heated after adding NaOH. The ester gets hydrolysed into its sodium salt and alcohol . The fruity odor of the ester now turns into characteristic alcoholic smell

the reaction of ethyl ethanoate with sodium hydroxide is shown below

CH3COOCH2CH3 + NaOH ---> CH3COONa + CH3CH2OH

if large esters presen in animal or vegetable fats are heated with NaOH , sodium salt of large acid is formed which are important ingredients of soap

This is the reason, this reaction is also called as saponification reaction
