# Protein does not stay in native configuration for longer time period in room tepmperature. They tend to denature soon. Storing proteins such as enzymes at - 20 degree celcius make them to be active for a long time. Cold temperature preserves the native conformation of the protein molecules for longer time period.

Blood contains lot of protein molecules in it. That is why it is advised to rinse the blood stain with cold water before it gets denatured. Cold water will not only maintain the configuration but also remove the stain.
