should you worry about the presence of nucleic acids in egg white protein

Answer #1

Not at all. We should not worry about the presence of nucleic acids in the in egg white.

nucleic acid is a very week acid (not strong acid like sulphuric acid) and it presents in very less quantity in the egg. So, the acidic property is not going to cause any harm. Except that it contains a ribose sugar (just like glucose, only difference is that it is 5C while glucose is 6C) and an N2 base which also are not going to cause any harm. Also, along with that, most of the food that we eat also contain nucleic acid. We eat some living organism and any organism is made of cells and every cell contains nucleic acid. In the gut, there are different enzymes like- phosphodiesterases, endonucleases and nucleoside phosphorylates which digest the nucleic acids present in the food into nucleotides or free bases. So, we should not worry about the nucleic acid present in the egg white.

Antibodies that bind with high affinity to some viral surface proteins require heavy chain CDR3 loops of unusual length. Whereas the average human heavy chain CDR3 length is ~15 amino acids, antibodies with VH CDR3 loops of >30 amino acids are readily detected in the repertoire.
