Nitrates present in the foods mainly vegetables, fruits and cereals are known as dietary nitrates. In some of the foods and as well inside the human body nitrates and nitrites occurs naturally. They can be used to process foods and used as preservatives. They are important because lower blood pressure by dilating blood vessels and thus very helpful in cardiovascular disorders. While nitric oxide is present in body naturally and helps in maintaining body metabolism.

They both are actually linked because when nitrates are converted to nitric oxide then nitric oxide is further converted into thiols which works as vasodilator and decreases platelets aggregation, reduce inflammation, helps in healing of wounds and also works as gastroprotective.
