1. It's the testosterone and estrogen ie sex hormones It's level act as the control over GnRH and thus the level of gonadotropin is maintained. In male the testosterone acts and in female the estrogen acts by inhibiting the production of GnRH if their level increases.

2. ACTH is the hormone that are responsible for the regulation and coordination of the immune response. ACTH acts on adrenal gland to produce glucocorticoid that can act directly on the immune system and suppress it. As it is controlled by ACTH, it is the hormone that regulates the immune function.
