The broken cartilage is hard to heal beacuse it has limited healing capacity.Hyaline cartilage has no blood supply and deposition of new matrix is very slow that makes more difficult to recover.In cartilage ,chondrocytes are bounded to lacunae and can't migrate to the region where cartilage is damaged.

Ingested cartilage from the bone of the meat doen't contain protein and after cooking at certain heat ,cartilage melts and breaks down into gelatin which doesn't add to the nutional value.
