When we add iodine in starch solution, an intensely colored complex is formed, that Color is intense blue

It may be due to iodine gets stuck into the coils of amylose (not enzyme amylase) molecule.

* amylose actually forms a spiral much like a coiled spring.

When iodine stuck into amylose molecule, it forces the iodine atoms into a linear arrangement in the central groove of amylose coil. Then there is transfer of charges between iodine and starch . The iodine starch complex has energy level spacing that are just so for absorbing visible light giving the complex its intense blue colour .
