It is done thrice because it is correct extraction process of your compound, if there are impurities which are water soluble they can be removed easily.

See, if u add 5 ml water first to insoluble PPT is can dissolve impurities which are water soluble and gives u your desired product with lest impurities and again u perform the same task again it dissolve impuritieswhich are left in your compound and performing the last time assure u that ur desired product with lest impurities or no impurities.
