Q) Discuss the effect of natural lipases in cheese on the composition of the lipids. Explain the mechanism in which the lipases function.

Lipase is an enzyme that catalyses fat. There are various types of lipase like gastric, pancreatic, salivary, endothelial and lipoprotein lipase. But the effect on cheese lipids maily due to pancreatic lipase.

Pancraetic lipase is a triglyceride lipase which is a family of lipolytic lipase, i.e. which cause lysis of lipids.

Lipids contains triglycerides and lipase breaks these tryglycerides to monoglycerides and free fatty acids.  Triacylglycerol + 2 H2O ? 2-monoacylglycerol + 2 fatty acid.

Further bile acids released from gall bladder to duodenum and act on these monoglycerides, where they coat and conert them into smaller droplets called chylomicrons which are then abseorbed via intestinal lympahtic ducts.
