because bile salt contain many hydroxyl group in its structure than cholestrol and ester. the choestrol contain hydroxyl group which make it more polar than its ester and we know that ester has only act as hydrogen acceptor where as alchol act as both acceptor as well as donar of hydrogen bonds.
