How would you tell whether an actor is being themselves or acting?

I would imagine it could be tricky talking to an actor. Especially a really good one. It would be hard to tell if they were actually enjoying talking to me, or if they were just acting like they liked me. How could you tell the difference?

i got into acting as a young child because i loved being someone other than myself. and of course, as an adult now, i'm more comfortable with who i am but it still stands true...i enjoy creating a new person and performing for people. this means when i'm not getting paid, i'm not acting. actually, i'm kinda an awful liar too. so when i'm simply talking to someone, i'm myself. but every actor approaches things differently and with the way reality tv is today, you don't necessarily know what you're getting into. i think for the most part, unless you're just a terrible judge at people, trust your instincts. it's hard to make a blanket statement about any one profession.
