Study question: Are there any differences in baseline Insulin use and sex (both nominal/categorical data)  of patients assigned to the control and intervention groups (nominal/categorical data)?

My question is, to measure the difference between treatment and control groups for insulin use and sex, what statistical test do I use? Do I use a chi-square test or no? What statistical test works best to answer the study question?

Your understanding is right. To answer the research question, the non-parametric test that is best used is the chi square test of independence. Here you are dealing with nominal(categorical data), this test would make the best sense to be used in this situation. Just set the null that the variables are independent and the alternative as variables are dependent. If you are able to gather evidence against the null, that would mean that the there are significant differences in baseline Insulin use and sex of patients assigned to the control and intervention group.
