Actually we take that quantity on x-axis which varies consistently. Here in this case usually temperature will vary more so, we take it on x-axis and not on y-axis axis (i.e. Pressure vs Temperature not Temperature vs Pressure in y vs x plot)

But it is not always the case that we take temperature on x-axis. Suppose we want to plot Temperature and Time. In this case time will vary more, so we take time on x-axis and temperature on y-axis.
