This can be expressed mathematically as -

F = m*a

Mass 'm' is constant.

So,

Means, acceleration is directely proportional to the applied force.

Now, if Newton's second law didn't work and force cause unpredictable accelerations, then -

When we swing a bat at a baseball, it will cause INFINITE acceleration to the baseball.

Because, in this case acceleration(a) is not proportional to the applied force (F).
