We can hear Sonic Booms when the Falcon 9s land, but don't hear sonic booms when it take off because the sonic boom is created due to shock wave and in this case when the Falcon 9s take off it reaches high altitude and high speed, when it crosses the speed of sound, it does not create the shock wave and due to this it does not create sonic boom also due to this it cannot be observable to the observer on the ground.
Also , during the take off , Sonic Boom Downward Control Box is installed near the take off site which helps to reduce the effect of sonic boom during take off of Falcon 9s.
