4. Microwaves heat up food by alternating the magnetic field back and forth very rapidly. This makes polar molecules with their partial + and - charges flip back and forth and increases their kinetic energy. Which molecules in mayonnaise would move in response to the microwave’s changing magnetic field? Consider the water, oil and emulsifying molecules in the mayonnaise.

Answer #1

As we know that emulsifying molecules has head and tail, head is water loving and tail is water repelling and oil loving.

So, head part of emulsifying molecules will dissolve in water and tail part will dissolve in oil.

As we know that water is more electrolytic than oil, therefore water molecules and head part of emulsifying molecules in water will move more, in respone to the microwaves changing magnetic field than that of tail part of emulsifying molecule in oil
