So, head part of emulsifying molecules will dissolve in water and tail part will dissolve in oil.

As we know that water is more electrolytic than oil, therefore water molecules and head part of emulsifying molecules in water will move more, in respone to the microwaves changing magnetic field than that of tail part of emulsifying molecule in oil
