By using near infrared spectroscopy (NIR), total soluble solids (brix) can be evaluated. NIR is sensitive to the presence of molecules, which contains N - H (nitrogen-hydrogen), O - H (oxygen- hydrogen) and C - H (carbon- hydrogen) groups present. This instrument can be calibrated and reports in Brix. NIRs uses to predict the chemical constituents based on the aggregate amount of light reflected or transmitted through the sample. O - H for water and C - H for carbohydrates bonds are responsiblr for strong absorption bands in the NIR spectral region. For this, a new calibration model is required for each specimen.
