No the burning does not mean its gone.
Most of the organic waste contains elements majorly like carbon , hydrogen and oxygen. When this waste is burnt in oxygen the elements gets oxidised and forms compounds such as carbon dioxide (CO2) and water vapor (H2O).
So the substances get converted into other compounds , they are not simply disappearing into air. Since they are mostly gaseous products hence evaporate in the normal conditions leaving ash behind. This is in accordance with the law of conservation of matter.
