An open system can be defined as any system which can transfer energy as well as matter with its surroundings during a polytrophic process. This is a free exchange and an example can be taken as when you boil water on the stove, here energy and matter are being transferred to the surroundings and this is a classic example for an open system.
A contrast to this is an isolated system which neither exchanges energy nor matter nor information into this environment. And this is also known as a closed system.
Now in an open system they assume there the energy supplies cannot be deleted and they are everlasting and never ending. But in reality these energy sources are also from such open systems in the surrounding.
