You poured boiling water in the cup with noodles and dried vegetables and covered it for about 10 minutes. As soon as you removed the cover, you noticed that the noodles and the vegetables have expanded and softened.

2)Due to high temperature of water, it may cause lesion in cell membrane or cell wall of vegetables, and there is large quantity of water outside, so it will definitely go in, and water goes in causes expansion of vegetables, and softening as well, because of water in any matter causes increased spacing between the particles of that substaowhich will reduce the rigidity of that substance.
