Purpose
To understand and apply the concept of the vegetarian diet by selecting and consuming an all plant based healthy meal. Following a strict "vegan" diet can be challenging. The benefits of a plant based diet include the reduction in numerous diseases, including obesity, heart disease and diabetes. Just how easy a strict vegetarian diet is to follow is another story. This activity requires you to eat a strict vegetarian diet for one meal and evaluate it from both a nutritional and enjoyment perspective. By replacing just a couple of animal protein meals per week, you can reduce the intake of saturated fat and cholesterol that is found in meats, fish and poultry as well as in their byproducts.

Directions

  1. This assignment requires you to consume a meatless, all plant based meal. You can prepare a meal at home or visit a restaurant and select a "vegan" meal. NO ANIMAL products can be consumed. No milk, no cheese, no eggs..........NO animal products at all.
  2. Post your menu or recipe (if you made the meal at home) on the discussion board and answer the following questions about your meal.
    a. How did you like the taste of the meal? Was it satisfying?
    b. What was the approximate cost of the meal?
    c. What food contributed the most protein to your meal?
    d. What were the nutritional challenges you faced in this assignment?
    e. Are you missing any major nutrients?
  3. Write a 2-3 sentence response to one other student's meal and evaluation posting.
  4. Bon appetite!
