Vitamins A, D, E, and K are called the fat-soluble vitamins, because they are soluble in organic solvents and are absorbed and transported in a manner similar to that of fats.

Lipid/fat-soluble vitamins are soluble in fats. They are absorbed by fat globules that travel through the small intestines and into the general blood circulation within the body. Fat-soluble vitamins are stored in the body when they are not in use.

The water-soluble vitamins include ascorbic acid (vitamin C), thiamin, riboflavin, niacin, vitamin B₆ (pyridoxine, pyridoxal, and pyridoxamine), folacin, vitamin B₁₂, biotin, and pantothenic acid.

Water-soluble vitamins are carried to the body's tissues but are not stored in the body. They are found in many plant and animal foods and in dietary supplements and must be taken in daily.
