For Solid state diffusion size is the most important factor,and in case of interstitial diffusion the interatomic spacing is most important in which an interstitial atom fits.In case of C and Fe the interstitial spacing of the Fe lattice is nearly of same size of the carbon atom so diffusion in Fe lattice is much easier.This is not the case with Cu lattice.
