Because that is the only pure water.For experiments depending on what they measure impure water will change density,conducitivity,freezing point,boiling poinrt and corrosive and surface tension.
The imortant of a experiment is that it is documented as to procedure and items used and results should be reproduced accurately by a third party in a different place,if the water is different you get widely different results depending on properties of water taken.Distilled water minimises the potential of water in taking the test.
