This frequently happens when I visit restaurants or any food outlet. If their service levels are not good, I do not choose to buy their product(food). This demand gap is generally low, as the restaurants are not so bad that they perform badly in all the parameters(food taste, hospitality, cleanliness etc.).
I chose to order less food and satiated the remaining hunger by eating at another restaurant. A lot of people will be happy to buy from another outlet since nowadays, the products/services are very elastic in nature, and thus the people tend to go for a substitute product/service if they are not satisfied with the current service/products.
