For the same restaurant, determine the most likely security
challenge it faces in the purchasing function, along with how you
believe the restaurant addresses that challenge.
I will be using Popeye’s restaurants again as my example. I
feel that the main challenges for Popeye’s would be: Enough space,
temperature and humidity, and equipment. Because Popeye’s is a
chain restaurant the focus of remodeling is usually solely on
cosmetic dynamics and not so much on adding more space. This
normally means that whatever the size of that location is what they
will be stuck with. Even with a good size area most of the space is
given to the kitchen for food storage and preparation and sometimes
storage for cutlery and serving ware is overlooked. The location I
worked at in the past had shelves in the office that held all food
boxes, napkins, cutlery, and cups.
Throughout the day I have seen employees taking food from the
serving line and packing boxes of food. There prices are the most
expensive in the area and should be lower. If they weren’t losing
all of that money on theft and pilferage, they could offer
reasonable prices to customers. The way to address that issue would
be to hire a manager and increase rulers. If employees know they
can slack, they will. If the owners do not require employees to
ring in drinks and meals, then there is no way to account for
them
