Gypsum has important role in cement .It is used to regulating the setting time of cement i.e. to control( slow down) rate of hardening of cement paste.

When water is added to cement , it starts reacting with C3A compound and hardens , time taken in this process is very less which doesn't allow time for transporting , mixing and placing. When gypsum is added into cement then added water to it , reaction with C3A will take sufficient time . The time allowed for mixing ,transporting and placing plays a important rolein strength , composition and workability of cement. As gypsum retards the process of hydration so its is termed as retarding agent.
