When drawing a plot of potential energy versus bond rotation for alkanes, why do some plots start at 180 deg and others at 0? Does it matter where you start and how do you know which C to rotate?

minimum 60 degrees difference is mandatory when drawing energy profile diagram. Below this angle there is no appreciable change in energy of that particular conformation. Well generally plots will start from higher energy conformation to higher one through passing lower energy one. Sometimes 0 degree (eclipsed) conformation may be higher or lower than 180 degree (staggered) conformation depending upon steric, gauche, van der waals interactions of bulkier substituents positioned on those carbons.

We always rotate front carbon and being back carbon fixed. Front carbon three sigma bonds are clearly visible.
