In a study on effects of heat on protein structure, a graduate student made the following observations: a solution of the enzyme hexokinase lost 50 % of its activity in 12 minutes when incubated at 45 deg C. However, when this experiment was repeated in the presence of a large concentration of one of its substrates, hexokinase only lost 3 % of its activity in 12 minutes at 45 deg C.Consider the results of the experiment described above. Suggest a reason why thermal denaturation of hexokinase was decreased in the presence of its substrate.
