1. Wheat germ is only a part of the whole wheat grain. It is a concentrated part which has the maximum nutrients like vitamin E, essential fatty acids, folic acid, zinc, magnesium, phosphate etc. Because wheat germ is the part which sprouts and grow to make a new plant, most nutrients and DNA is required here. DNA is concentrated here because it has the information which is responsible for translation of proteins which is required for the growth.

2. Wheat germ swell because of uptake of water through the process of osmosis. Osmosis is when solvent particles move from high concentration to low concentration via semi permeable membrane.
