answer: molecule made of just carbon's and hydrogens are mostly non-polar (The Pauling electronegativity of Carbon is 2.55 and Hydrogen are 2.2. Due to the small difference, 0.35, and the definition of a polar bond, C-H bonds are considered nonpolar ) and due to this most of the molecule made of carbons and hydrogen are soluble in the non-polar solvent and insoluble in polar solvents.

but in case when they have an alcohol functional group attached to them they become polar due to the presence of Oxygen which is more electronegative than both hydrogen and carbon also the pressence of an alcohol functional group provides the hydrogen bonding. And mostly they are soluble in the polar solvent

so they act differently in the different solution.
