What molecules are required for a positive Maillard reaction?
The two molecules required for positive Millard reaction are-
I. Sugar / carbohydrate
II. Amino acids/ Protein
The carbonyl group (-C=O) on sugar reacts with nucleophilic amine group (-NH2) at around 1500C or above to give the characteristic Millard reaction.
