Milk is a mixture of different substances and its composition is as follows

3 - 5 % butterfat approximately 15 to 20 fatty acids make up 90% of the milk fat. 5 % lactose = milk sugar , a disaccharide of glucose and galactose. 3.3 %milk proteins: casein and whey proteins, 0.7 % minerals, 87 % water. Although composition varies depending on the species (cow, goat, sheep), breed (Holstein, Jersey), the animal's feed, and the stage of lactation.
