genetics and the amounts of amylose (unbranched starch) and
amylopectin (branched starch) in peas. (This could prove to be
important for diabetics.) The starch content of one genetic variety
of pea was analyzed using 4 samples and found the mean to be 171
g/kg (this is grams of amylose per kg of pea) with a standard
deviation of 4. Another pea analysis, using 5 pea samples, reveals
wan average amylose as 242 g/kg with a standard deviation of 12.
