This cleansing action is due to micelle formation.Generally soap contains a salts or/and hydrocarbon chain with polar head & non polar tail.
When greacy plates are in contact with soap solution then the non polat tail of hydrocarbons are inserted in to greacy material becoz this tail is hydrophoboc in nataure.The polar head is in the water ie outside the greacy material & in contact with water due to hydrophillic nature of polar head. Thus it forms a ball like structure calles as micelle and greace material is removed fro plate & suspended in water.
