The benedicts test is the most accurate in order to differentiate from reducing to nonreducing sugars. The principle of Benedict's test is that when reducing sugars are heated in the presence of an alkali, they get converted to powerful reducing compounds known as enediols. Enediols reduce the cupric ions (Cu2+) present in the Benedict's reagent to cuprous ions (Cu+) which get precipitated as insoluble red copper(I) oxide(Cu2O).

Aldehydes and ketones are organic compounds which incorporate a carbonyl functional group, C=O. The carbon atom of this group has two remaining bonds that may be occupied by hydrogen or alkyl or aryl substituents. If at least one of these substituents is hydrogen, the compound is an aldehyde. If neither is hydrogen, the compound is a ketone.
