Why do you use distilled water to wash the organic layer and anhydrous sodium sulfate in an extraction procedure
Normal tap water may contain acidic or basic impurities that may affect the compound present in the organic layer during extraction, thus it is adviced to use distilled water in an extraction procedure. Similarly, anhydrous sodium sulfate is used as a dehydrating or drying agent. The technique workd on the principle, that sodium sulfate picks up water from the organic layer and forms hydrous sodium sulfate. Now If sodium sulfate itself has water to start with, it would not be possible to take any more water molecule and thus would not act as drying agent. Thus it is very important to use only anhydrous sodium sulfate in an extraction procedure.
