Our nose or olfactory system have different receptors. The two enantiomers of a compound being different in configuration binds at different receptor sites in our nose. Each receptor produce different signal to brain. As a result 2 different signals will be generated for 2 enantiomers of a compound and thus both of them will have a different odour or fragrance. This property is utilised by perfume industry in producing perfumes of different odour by taking enantiomers of a odour producing compound.
For eg. (4R)-(-) carvone has a minty fragrance while (4S)-(+) carvone has a caraway odour.
